Ingredients

Method

1.Preheat oven to 180°C (160°C fan forced). Grease 8cm x 26cm bar cake pan; line base with baking paper.
2.Beat egg whites in small bowl with electric mixer until soft peaks form. Gradually add sugar, beating until sugar is dissolved between additions; transfer mixture to medium bowl.
3.Fold sifted flour and rind into egg-white mixture then fold in nuts and cranberries; spread into pan. Bake about 30 minutes; cool in pan. Wrap bar in foil; refrigerate 3 hours or overnight.
4.Preheat oven to 150°C (130°C fan-forced). Line oven trays with baking paper.
5.Using serrated or electric knife, cut bread into 3mm slices; place, in single layer, on trays. Bake about 15 minutes or until crisp.

Wafers can be stored in an airtight container for up to 1 week.
