1.Preheat oven to 200°C (180°C fan-forced). Line bases of four 1-cup (250ml) metal moulds or ovenproof baking dishes with baking paper.
2.Using sharp knife, mandoline or V-slicer, slice potatoes into 2mm slices, pat dry with absorbent paper. Place a few potato slices in each mould, dot with a little of the combined butter and garlic, cheese, onion and parsley. Continue layering remaining ingredients, finishing with potato; cover each mould with foil, place on oven tray.
3.Bake in oven about 30 minutes or until potato is tender. Stand 5 minutes before turning out.

You can also use desiree or pontiac potatoes for this recipe.
