Delicious and impressively decorated cupcakes that resemble dazzling kaleidoscopes.

Method

1.Preheat oven to 180°C/350°F. Line 6-hole (¾-cup/180ml) texas muffin pan with paper cases.
2.Make cake according to directions on packet. Drop ⅓ cup of the mixture into each paper case; bake about 25 minutes. Stand cakes in pan 5 minutes; turn onto wire rack to cool.
3.Meanwhile, to make butter cream, beat butter in small bowl with electric mixer until as white as possible. Beat in sifted icing sugar and milk, in two batches.
4.Divide butter cream into three small bowls; tint each bowl with one of the suggested colours: green, purple and yellow.
5.Kaleidoscope one: Spread green butter cream over top of one cake. Cut triangular jubes in half. Cut square jube in half; cut halves into triangles. Using picture as a guide, decorate cake with lollies listed.
6.Kaleidoscope two: Spread purple butter cream over top of one cake. Using picture as a guide, decorate cake with lollies listed.
7.Kaleidoscope three: Spread yellow butter cream over top of one cake. Cut round jube in half, use one half only. Cut square jube in half; cut halves into triangles. Using picture as a guide, decorate cake with lollies listed.
8.Kaleidoscope four: Spread purple butter cream over top of one cake. Using picture as a guide, decorate cake with lollies listed.
9.Kaleidoscope five: Spread yellow butter cream over top of one cake. Cut green Life Savers in half. Using picture as a guide, decorate cake with lollies listed.
10.Kaleidoscope six: Spread green butter cream over top of one cake. Cut round jube in half, use one half only. Cut square jube in half; cut halves into triangles, use three triangles only. Using picture as a guide, decorate cake with lollies listed.

You’ll have 1 cup of the cake mixture left over, enough to make three more kaleidoscopes. Make as many kaleidoscopes as you have guests, then arrange them on a large round platter or board, like a wheel; they will look fantastic. These cakes are not difficult to make, just a bit fiddly.
