Lemon syrup
Limoncello cream


1.Preheat oven to moderately slow. Line 20cm x 30cm lamington pan with baking paper, extending paper 3cm over long sides.
2.Beat butter, rind and sugar in small bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well between additions. Mixture may curdle at this stage, but will come together later.
3.Transfer mixture to large bowl, stir in sifted flours, milk, fruit and nuts. Spread mixture into prepared pan. Bake, uncovered, in moderately slow oven about 45 minutes.
4.Meanwhile, make lemon syrup. Stir ingredients in small saucepan over heat, without boiling, until sugar dissolves, bring to a boil. Reduce heat, simmer, uncovered, without stirring, about 10 minutes or until thickened slightly.
5.Remove slice from oven, pour hot syrup over hot slice in pan. Cover, refrigerate overnight.
6.Make limoncello cream. Beat ingredients in small bowl with electric mixer until soft peaks form.
7.Cut slice into small squares, serve with limoncello cream.

An Italian lemon-flavoured liqueur, limoncello was originally made from the juice and peel of lemons grown along the coast of Amalfi. You can substitute it in this recipe, if you wish, with any lemon-flavoured liqueur or with an orange-flavoured one such as Cointreau. You need approximately five lemons for this recipe.
