Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Grease a 20cm baba pan. Combine butter, brown sugar, eggs and sifted flour and ginger in large bowl, stir with wooden spoon until mixture is smooth. Spread mixture into prepared pan.
3.Combine sour cream and caster sugar, spread evenly over mixture. Bake for about 45 minutes. Stand 2 minutes before turning on to wire rack to cool. Dust with icing sugar before serving.

This cake is best eaten on the day it is made. It is important not to over beat this cake mixture, or the sour cream will slip to the base of the pan.
