Method

1.Preheat oven to 200°C (180°C fan forced). Line oven tray with baking paper.
2.Place eggplant on oven tray, bake about 25 minutes or until soft. Cool, remove skin, then blend or process eggplant with garlic and juice until almost smooth. Stir half the onion into the dip, season to taste.
3.Serve dip sprinkled with remaining onion, serve with carrot.
