Method

Fruit mince slice

1.Preheat oven to 180°C. Grease 20cm x 30cm lamington pan; line with baking paper, extending paper 5cm over long sides.
2.In a small bowl, beat butter and sugar with electric mixer until pale in colour; stir in sifted flour, in two batches. Press dough over base of pan. Bake 10 minutes.
3.Meanwhile, make topping.
4.Press topping gently over base. Bake about 25 minutes or until slice is firm and golden brown. Cool slice in pan before cutting.

Topping

5.Blend or process fruit mince until chopped finely. In a small bowl, beat eggs, sugar and brandy with electric mixer until thick and creamy; fold in flour, coconut and mince.
