1.Preheat oven to 180°C/160°C fan forced. Line a baking tray with baking paper.
2.Place cases on prepared tray. For each vol-au-vent, line pastry case with 3 slices ham, bringing ham above rim to create a decorative edge. Sprinkle with cheese, then gently crack an egg into centre of case.
3.Bake for 15-20 minutes or until eggs are cooked to your liking. Sprinkle with chives. Serve at once with vegies.
