Method

1.Place the mince, curry paste, breadcrumbs and egg in large bowl, mix with clean hands until ingredients are well combined.
2.Preheat oven to 180°C (160°C fan-forced). Press mixture firmly into a greased loaf dish. Bake for 45 minutes. Meanwhile, combine chutney, juice and 2 tblsp water in bowl. Remove loaf from pan.
3.Pour chutney mixture over chicken loaf and return to oven for a further 25-30 minutes until loaf is well glazed and cooked through.
4.Stand loaf in dish for 10 minutes then turn onto serving platter. Serve in slices with steamed vegetables of your choice.
