Method

1.Cut tops off muffins discard. Hollow out muffin centres, leaving a 1cm (½-inch) border.
2.Drop level tablespoons of marmalade into each muffin. Top with ice-cream. Stand muffins on oven tray, freeze about 1 hour or until firm.
3.Preheat oven to 240°C (220°C fan forced).
4.Just before serving, beat egg whites in small bowl with electric mixer until soft peaks form, gradually add sugar, beating until dissolved between additions. Beat in rind.
5.Spread meringue over muffins. Bake about 2 minutes or until browned lightly. Serve immediately.
