Coffee syrup


1.Preheat oven to 170°C. Grease 10-holes of a 12-hole (⅓-cup/80ml) muffin pan.
2.Combine cocoa powder and sugar in a large bowl. Blend in boiling water, then chocolate, stirring until smooth. Stir in egg yolks, ground hazelnuts and flour.
3.In a small bowl, beat egg whites with electric mixer until soft peaks form. In two batches, fold egg whites into chocolate mixture; divide mixture into prepared pan holes.
4.Bake about 15 minutes. Meanwhile, sugar and water in a small saucepan over low heat until sugar dissolves; bring to the boil. Reduce heat; simmer, uncovered, without stirring, about 10 minutes or until syrup thickens. Stir in coffee cocoa powder; strain into small heatproof jug.
5.Stand cakes in pan 5 minutes before serving warm, drizzled with syrup.
