Method

1.Grease a 19cm x 29cm lamington pan, line base and sides with paper; grease paper well.
2.In a saucepan, combine butter, sugar and cocoa; stir constantly over heat without boiling until sugar is dissolved. Quickly stir in egg, then biscuits, coconut and walnuts. Press mixture evenly into prepared pan, refrigerate until set.
3.Make filling: In a small bowl, cream butter and essence with electric mixer until smooth, gradually beat in sifted icing sugar and custard powder alternately with water. Beat until light and fluffy.
4.Make topping: Melt chocolate and butter over hot water, cool slightly.
5.Spread base with filling, refrigerate until set, then spread with topping, refrigerate until set before cutting.
