1.Preheat oven to 180ºC (160ºC fan-forced). Grease and line deep 20cm-round cake pan.
2.Dissolve instant coffee granules in the boiling water; cool. Combine packet chocolate cake mix, eggs, butter, water and coffee mixture in a medium bowl. Beat on low speed with electric mixer until ingredients are combined. Increase speed to medium; beat 3 minutes. Pour mixture into pan; bake about 45 minutes.
3.Stand cake in pan 10 minutes before turning, top-side up, onto wire rack to cool. Split cake into three.
4.Beat cream until firm peaks form; stir in grated chocolate. Sandwich cake layers with chocolate cream.
