1.Press potato between layers of absorbent paper to remove as much moisture as possible.
2.Combine potato, chives and sour cream in large bowl, mix well. Divide mixture into eight portions, shape into 8cm patties.
3.Heat oil in large frying pan, cook patties, in batches, until browned both sides. Place patties in a single layer on oven tray, bake, uncovered, in moderate oven about 20 minutes or until cooked through.
