1.Preheat oven to 200°C (180°C fan forced).
2.Place tomatoes in large shallow baking dish, spray with cooking-oil spray. Roast, uncovered, about 20 minutes or until tomatoes soften.
3.Meanwhile, cook chicken in heated oiled large frying pan until cooked. Cover, stand 5 minutes.
4.Blend or process half the tomatoes until smooth. Place in medium saucepan with basil and cream, cook, stirring, over low heat, until hot. Season to taste.
5.Serve chicken topped with sauce, remaining tomatoes, and if you like, extra basil leaves.

Basil is one of the easiest and most useful herbs to grow. You don’t need a large kitchen garden, a pot or a window box in a protected, sunny position is sufficient. Basil will grow year-round (depending on the climate) and you can freeze the leaves for later use.
