The team debated and defined the essential elements that make the best carrot cake: great spicing, a moist texture, the inclusion of walnuts and an abundance of frosting were all agreed as non negotiable. Extras like coconut or pineapple were vetoed.
Our brown butter version of the frosting also won fans, so we have included it as a variation here.
