Barbecue sauce


1.Make barbecue sauce. Bring ingredients to the boil in medium saucepan. Remove from heat; cool.
2.Brush both sides of ribs with barbecue sauce; place in large deep baking dish. Pour remaining sauce over ribs, cover; refrigerate overnight, turning ribs occasionally in the sauce.
3.Preheat oven to 160°C/140°C fan-forced.
4.Drain ribs; reserve sauce. Divide ribs between two wire racks over two large shallow baking dishes. Roast, covered, 1½ hours; brush with sauce every 20 minutes. Turn ribs midway through cooking time.
5.Increase oven temperature to 220°C/200°C fan-forced. Uncover ribs; roast, brushing frequently with sauce, until ribs are browned and cooked through, turning after 15 minutes.
6.Place remaining barbecue sauce in small saucepan; bring to the boil. Reduce heat; simmer, stirring, about 4 minutes or until sauce thickens slightly. Using scissors, cut ribs in portions of two or three ribs; serve ribs with hot sauce.

Ask your butcher to cut pork spareribs “American-style” for this recipe. Trimmed of almost all fat, the meat usually comes in racks of 8 to 10 ribs.
