Baked mushrooms

Filled with chopped bacon, onion and parmesan cheese, these moreish mushrooms make for a tasty brunch, lunch or light dinner with salad.

1.Gently remove stalks from 8 mushrooms. Chop stalks and the remaining mushroom finely.
2.Brush mushroom caps all over with butter. Place on lightly oiled oven trays.
3.Preheat oven to 180°C/350°F.
4.Cook bacon and onion in heated oiled small frying pan until bacon is crisp. Add chopped mushroom, garlic and breadcrumbs. Cook, stirring, until well combined. Remove from heat; stir in cream, oregano and cheese. Divide bacon mixture between mushroom caps.
5.Bake, in oven, about 10 minutes or until hot.

Cap mushrooms can be substituted for the flat mushrooms. Cook 5 minutes; cool slightly before serving.
