1.Preheat oven to 200°C/400°F. Grease eight holes of a 12-hole (1/3 cup/80ml) muffin pan.
2.Combine apple and sultanas in medium bowl.
3.Place one pastry sheet on board; brush with a little of the butter; top with another pastry sheet. Repeat brushing and layering with remaining butter and pastry sheets.
4.Cut filo stack down the centre vertically; cut into quarters horizontally (you will have eight rectangles). Press one filo stack into each pan hole.
5.Divide apple mixture evenly into pastry cases. Bake about 10 minutes or until pastry is browned lightly.

You could use any dried fruit instead of the sultanas. Dried cranberries would be the best combination with apples for this excellent dessert. Serve with a scoop of vanilla ice-cream to top it off.
