Here is a simple and tasty way to revitalise the humble pea and make it a worthy addition to any meat dish, rather than an also-ran. Eating your greens never tasted so good.
1.Boil, steam or microwave 2¼ cups fresh shelled peas until just tender; drain. Meanwhile, combine 40g (1½ ounce) softened butter, 1 tablespoon finely chopped fresh mint and 1 teaspoon finely grated lemon rind in a small bowl. Serve peas topped with butter mixture. serving suggestion Serve with roast pork or chicken.
You can use frozen peas in this recipe if you prefer.
